Low carbs desserts are one of the challenges i have been taking lately as you might see in last couple of recipes . It is really not easy to ballance the challenging aspects of low carbs flours, sweetners and the traditional taste and feel of a good dessert , but with experience and endless tries nothing is impossible . so here enjoy this new vanilla cake with ricotta cream and strawberries recipe .

INGREDIENTS
Vanilla cake
- 2 eggs
- 50 gr coconut flour
- 50 gr melted coconut butter
- 1 tsp vanilla extract
- 150 gr yogurt ( or soja yogurt )
- 50 gr milk
- 10 gr baking pouder
- Sweetner : equivalent of 75 gr sugar it depends on your sweetner the ratio is usually indicated on the box
Ricotta cream
- 100 gr ricotta cheese
- 100 gr heavy cream
- sweetner ( equivalent of 50 gr sugar)
- 1 tsp vanilla extract
- fresh strawberries for decoration
INSTRUCTIONS
- Mix the eggs , melted coconut butter , yogurt , sweetner and milk
- Add in gradually the coconut flour while mixing slowly
- Finally add the baking pouder to keep he mixture fluffy and light .
- Bake in a 180 C preheated over for 20 ~ 25 mins.
- Meanwhile , whip your heavy cream along with the sweetner and vanilla extract then fold in the ricotta cheese to get a fluffy mousse .
- Decorate your cake with the ricotta cream and fresh strawberries .
