Happy new year for all of you , may this year bring the humanity love , peace, joy and of course without forgetting , great food and sweet recipes .
I decided to start this newyear with a sweet classic "Nutella Brioche" . I have been seeing this recipe all over the internet the last couple of months (or maybe even more) but i always delay trying it because of all the time a brioche dought can take .
So, as a 2017 resolution i deciced to finally step up and do it ...
Ingredients
- 400 gr flour
- 50 gr sugar
- 1 tblsp vanilla extract
- 15 gr bread yeast
- 4 eggs
- pinch of salt
- 30 gr of milk
- 200 gr Nutella
- 150 gr cold butter
Let's get down to business...
Brioche dough is quite a technical recipe since it needs time, prcision (and physical effort , if you do not have a mixer ).
First , start buy mixing toghether your dry ingredients with the yeastt for a couple of munites on low speed . Now add in your warm milk while keeping your mixer on a medium speed and start adding your lightely beated eggs 1/3'd at a time until getting a homogenous dough , if your dought is runny or so sticky t add in few extra tblsp of flour until it get's all together but be careful don't add too much to keep your brioche light and fluffy .
The third step is adding in the cold butter cubes . keep mixing until the whole butter is well incorporated in your dough and let your mixer on medium speed for about 15 to 20 mins , the whole mixing process from adding in ingredients until the end should be about 30 to 35 min .
The final result should be a homogenous and lightly sticky dough . Now wrap up your dough and let it sit in the fridge over night until it doubles in volume .
The forth step , get your dought out and let all the air out buy flatenning it with your fist .
At this point you have a classical Brioche dough you can use it for anything you want , plain brioche bread , cinnamon buns , etc ...
Finally , roll down your dough in a rectangular shape , spread the Nutella on top and roll it , then cut your dough in two verticaly and make a simple braid alterning both halves , the Nutella filled side up . Let it rest in a bread baking sheet for at least 40 min until it re-doubles in volume , put on some egg wash so it becomes golden and shiny when baked.
Bake in a 200 C oven for about 45 min ( of course it depends on your oven so keep checking it once in a while to prevent any bad surprises ) .
